This Spaghetti Squash Casserole is an easy, low carb, pasta-like dish that everyone will absolutely love. You can serve this alongside a caesar salad to make your meal complete.
Ingredients:
1 pound Italian Sausage
1 onion diced
2 cloves garlic minced
1-2 cups marinara sauce or pasta sauce
3 eggs whisked
Optional: 1/4 cup fresh parmesan cheese, more for topping
Directions:
Follow directions to prep the spaghetti squash. (you may want to slightly undercook the squash so it does not get soggy in the casserole)
Once squash is done cooking, place shredded squash in an 8×8 greased baking dish.
Meanwhile, in a large pan over medium heat, add italian sausage, onion and garlic. Cook until pork is no longer pink and is broken up into pieces.
Add marinara sauce, dried basil and salt and pepper to your liking.
Add sausage mixture to the 8×8 dish and mix well with spaghetti squash threads.
Lastly, add whisked eggs and cheese to the baking dish and mix everything together until you no longer see the eggs (if you have an allergy to eggs you can just use cheese to help bind this all together).
Place in a 400 degree oven and bake for about 15-20 minutes or until the top of the mixture forms a slight crust that doesn’t give when you press on it in the middle of the dish.
Let rest for 5 minutes before serving.
