- 2-3 tablespoons water (to thin the dressing)

Directions:

1. Prepare the broccoli: Blanch the broccoli florets in boiling water for 1-2 minutes until they turn bright green and are slightly tender. Immediately transfer the florets to a bowl of ice water to stop the cooking process. Once cooled, drain the broccoli well.


2. Combine salad ingredients: In a large mixing bowl, combine the blanched broccoli, red bell pepper, cherry tomatoes, red onion, sunflower seeds or chopped almonds, and fresh parsley.


3. Make the dressing: In a small bowl, whisk together the tahini, fresh lemon juice, olive oil, minced garlic, and Dijon mustard. Add water a tablespoon at a time until the dressing reaches your desired consistency. Season with salt and pepper to taste.


4. Toss the salad: Pour the dressing over the broccoli mixture. Toss everything together until the broccoli is well coated with the dressing.


5. Chill: Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
