Protein Crepes

These no-frill protein crepes pack a hefty protein punch, with a combination of eggs and collagen. I’m often asked for quick and easy breakfast ideas and these fit the bill. They are high in protein, which I am a big proponent of, especially first thing in the morning or even as a snack, because protein will help you feel satiated and not produce an insulin response, BONUS! These crepes are quick and easy and only require a few ingredients. They are also grain free, which can be ideal for those eating gluten free. Give them a try!



Ingredients:

  • 3 small eggs or 2 large

  • 1 scoop Bub’s Collagen (10 grams of protein) (use coupon code “Marnie” to receive 20% off at checkout)

  • ⅓ tsp vanilla

  • Pinch of salt

  • Optional fruit, honey or maple syrup (you can decide how much to use or not:)

  • Butter for pan


Directions:

  1. In a bowl, whisk the eggs.

  2. Add collagen, vanilla and a pinch of salt until well blended.

  3. In a stainless pan melt the butter.

  4. Pour the mixture into your buttered pan on medium-low heat and wait patiently until the pancake is cooked enough to easily flip. Then flip, and cook until done. Depending on the pan used– it will turn out like a thin pancake.

  5. For your sweet tooth you can top the crepes with cinnamon, wrap them around your favorite berry medley and or drizzle with honey or maple syrup.
