Ingredients:
1/2 large green cabbage
1/2 large purple cabbage
3 large carrots peeled
¼ cup plus 2 tablespoons extra virgin olive oil
¼ cup mayonnaise
1 ½ teaspoon salt
2 tablespoons lemon juice
1 tablespoon honey (optional or less can be used)
Directions:
Shred the cabbage with a thin slicing blade or the food processor and add it to the mixing bowl.
Grate carrots then add to cabbage.
Combine the rest of the ingredients in a bowl and whisk together until well blended to make the dressing.
Pour the dressing over the salad mix. Let it stand for 15 minutes before tasting and adjusting the seasonings.
