An all time favorite of mine! You can do this as a bowl with rice or as a wrap with Bibb Lettuce or corn wrap, or just a salad with the fixings on top! #poultry
Ingredients for Marinade:
Marinade Makes about ½ cup
1 head garlic (broken into individual cloves - about 12)
⅓ cup Extra Virgin Olive Oil
6 tablespoons apple cider vinegar
a pinch of ground cloves
½ teaspoon ground black pepper
½ teaspoon ground cinnamon
1 teaspoon dried oregano
½ teaspoon salt
Directions:
One by one drop the garlic cloves into a food processor letting each get thoroughly chopped before adding the next.
Stop the machine, remove the top and add the oil, vinegar, spices, herb, and salt. Re-cover and process until smooth.
Put into small jar and can be refrigerated for up to a month.
Or use as a marinade to make fajitas.
Ingredients for Fajitas:
2 pound chicken breast, cut into strips
1 large yellow onion, sliced
2 red peppers, julienned (whatever pepper color you want!)
Guacamole
Boston Bib lettuce
Directions:
Place chicken and ½ cup marinade in large glass bowl. Marinate for 2-24 hours (for more flavor marinate longer)
In large skillet heat oil in pan. Add chicken strips, cooking 2-3 minutes each side. Remove from pan and set aside. Add onion and pepper and saute until onions are translucent and peppers are soft.
To assemble place bib lettuce on plates. Add 2-3 strips of chicken, top with peppers and onions and finish with a scoop of guacamole.
