Updated: Apr 7

If you're craving a cozy, flavorful dinner that’s easy to throw together but feels a little more special, this Butter Chicken is a must-try. It's creamy, comforting, and packed with rich Indian spices that warm you from the inside out—without being too spicy for the whole family. The best part? It comes together in one pan and pairs perfectly with fluffy rice or warm naan. Whether you're new to Indian-inspired cooking or a longtime fan, this simple version is sure to become a weeknight favorite!

Ingredients:

  • 2 x 2 tablespoon of pastured, grass-fed butter

  • 2 pounds chicken breast, cut in chunks

  • 2 teaspoons garam masala

  • 2 teaspoons paprika

  • 2 teaspoons ground coriander

  • 1 tablespoon grated fresh ginger

  • ¼ teaspoon chili powder (adjust to taste)

  • 1 can of tomato puree (6 ounce)

  • ¾ cup coconut milk

  • 1 teaspoon Himalayan sea salt (or adjust to your liking)

Directions:

  1. Heat a pan, add the first 2 tbsp of butter and stir-fry the chicken chunks. You can cook them in 2 batches if your pan is too small.

  2. Remove the chicken from the pan.

  3. Put the second 2 tbsp of butter and slowly heat the spices for a minute or two until you can smell the aroma.

  4. Put the chicken back in the pan and stir so you mix in all the spices with the chicken.

  5. Add the tomatoes, coconut milk and salt to your liking.

  6. Let simmer for 30 minutes. Serve over rice.
