This easy bolognese is dairy free and great for a healthy weeknight dinner with a flavorful meat sauce, served over zucchini noodles, spaghetti squash or pasta, you choose! Since it is dairy free dairy-free, it is Whole30 compliant, paleo, gluten free and Low FODMAP. A perfect meal to prep ahead of time and the leftovers are delicious!
Ingredients:
1 large zucchini
2 tablespoons ghee or avocado oil
1 large onion, finely chopped
2 large carrots, finely chopped
2 large stalks of celery, finely chopped
2 cloves of garlic minced
1 pound ground grass fed beef
1 pound sweet italian chicken or pork sausage
1 can full fat coconut milk
6 ounces tomato paste
Season with sea salt and pepper
Directions:
In a large skillet over medium high heat, melt the butter or ghee, saute onions, carrots, celery until translucent. Add the garlic and cook for an additional minute.
In a separate pan brown the ground beef and sweet italian chicken (or pork) sausage. Once browned, add the meat mixture to the vegetables. Add coconut milk and tomato paste. Simmer over medium-low heat for 30 minutes or more.
Add sea salt and black pepper to taste. Serve over zucchini noodles or spaghetti squash.
